Turkey Meatballs With Blueberries & Balsamic
This versatile dish is great served as a main course with fresh egg pasta such as tagliatelle or as an appetizer for 8 people. Quick and easy to prepare, these deliciously fruity meatballs and will be a party favourite. Fresh is best but frozen blueberries can be used.

• 1 lb. ground turkey
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 2 tsp. Worcestershire sauce
• 3 tbsp. panko bread crumbs
• 1 egg, beaten
• 1⁄4 tsp. freshly ground black pepper, or to taste
• 3 tbsp. parmesan cheese, finely grated
• 1 tsp. Italian herb seasoning
Blueberry sauce
• 8 oz. (1 1⁄2 cups) blueberries (plus 2 tbsp. for garnish)
• 1⁄3 cup granulated white sugar
• 1⁄2 tsp kosher sea salt, or to taste
• 1⁄2 tsp. black pepper, or to taste
• 2 sprigs fresh rosemary
• 2 sprig fresh thyme
• 1 1⁄2 tsp. balsamic vinegar
1. Add all the blueberry sauce ingredients to the InstantPot. Stir to combine and set to Manual (More/High) for 5 minutes. When done do a quick release of the pressure and remove the lid.
2. Add all the meatball ingredients to a large bowl and mix together. Form the mixture into 1”meatballs.
3. Add the meatballs to the pot ensuring they are covered by the sauce. Set to Manual (More/High) for 5 minutes. When done do a quick release of the pressure.
4. Serve garnished with a scattering of blueberries.
Reduce the calories by 258kcal and make it more diabetic- friendly by substituting granulated white sugar with stevia. It has zero calories and does not raise blood sugar levels. Convert as per the brand of stevia and type (granulated, powdered, liquid etc.) you are using e.g. 4 tsp. Truvia Spoonable for 1⁄3 cup sugar.
